Sugar Glazed Chicken Meatball Sandwich on French Bread Bento #48

Whenever I make something, I am always trying to find ways in which to make it better.  I love ground chicken, and tend to use it a lot to make chicken sandwiches.  Awhile ago I made these chicken sliders  http://bit.ly/T8vkZx and they were a big hit.  As a result, I decided to make something similar, but with a twist.  This time I rolled them in sugar to provide a sweet glaze.  YUM!!!  I hope you enjoy….

Sugar Glazed Chicken Meatball Sandwich

Here is how you make this sandwich

Add 1 pound ground chicken, 1 tablespoon finely chopped shallots, 3 cloves minced garlic, 1/2 teaspoon minced lemon grass, 3 tablespoon finely chopped fresh cilantro, 3 tablespoon fish sauce, salt/pepper, and 1 1/2teaspoons cornstarch to a bowl. Mix well.

Place 1/2 cup granulated sugar on a plate. Form mix into balls, and roll in sugar on plate.

Place parchment paper on a baking sheet, then place sugar rolled chicken meatballs onto paper. Next put baking sheet in preheated 400 degree oven for 20 minutes or until chicken meatballs are fully cooked. Once done remove from oven.

Slice french bread and lightly butter. Place grill on med-high heat. Once grill is hot, place bread butter side down, and allow to brown. Pay close attention that bread doesn’t burn.

Chicken Meatball Sandwich

Next assemble sandwich with lettuce, pickled carrot and diakon, and chicken meatballs. Drizzle with lime-ginger sauce found here http://wp.me/p2N4wQ-od and serve!!

Ingredients

1 pound ground chicken
1 tablespoon finely chopped shallots
