So it’s a new year, and most of us are feeling extra sluggish from all of turkey, ham, dressing, and dessert we’ve feasted on over the last few weeks. Well, I was recently reading a favorite hair blog (www.sportyafros.com), and they mentioned a SaladJam Challenge (http://bit.ly/WdozEe). I thought that this would be a fun challenge for myself and readers during the month of January. I am not making any New Year’s Resolutions, but I am going to be more committed to exercising and eating better. I promise to make my salads fun and creative, packed with flavor and color. I hope you’ll join me for this challenge. It will be fun. And remember, you can ALWAYS pack your amazing salad for lunch!!!
Raw Collard Greens with Craisins and Pumpkin Seeds Salad
Clean a few raw collard green leaves.
Remove the hard stem in the center.
Roll up leaves, thinly slice, and place in a bowl.
Drizzle some fresh lemon juice and olive oil over greens. Add a little salt/pepper (adjust taste to your liking).
Add finely chopped fresh red bell pepper, pumpkin seeds, and craisins to bowl.
Toss well and serve.
