Well it’s day 3 of the #SaladJam challenge. Hopefully I’m inspiring some of you to ditch the iceberg lettuce…LOL
Today’s salad is pretty simple to make and packed with flavor and color.
I just sliced up some purple cabbage, added some shredded carrots and thinly sliced apples, and tossed with a delicious praline vinaigrette.
This salad can be eaten by itself as a vegetarian meal, or as a side dish alongside some meat/fish.
Growing up in the South, I developed a love for pecan pralines. I just love the sweet and nutty flavor, with a hint of salt. While I was snacking on some today, I decided to create a vinaigrette using the pralines, and toss it on this salad.
Here is how you create my Praline Vinaigrette
Grab a few pralines. I love Trader Joe’s Pecan Pralines.
Finely chop the pralines.
In a bowl add 1 tablespoon balsamic vinegar, 1 tablespoon mirin, 1 tablespoon water, 1 teaspoon maple syrup, 1 tablespoon chopped pecan praline, 1/4 teaspoon sugar, salt/pepper to taste, and 1 tablespoon canola oil. Mix well. And toss on salad.
And you can have this amazing salad for lunch in your EasyLunchbox the next day with some white carrots, and fruit.
