Is there a dish that takes you back to your childhood? One that either brings back fond childhood memories, or makes you want to cringe at the thought of ever having to eat it again. Well for me, that dish is carrot and raisin salad. I remember hating it as a kid. The carrots and raisins were always soggy, and dripping in a sweet mayonnaise dressing. And it never seemed to really go with anything I was eating. Most people I know rave about how much they love this dish, so it left me wondering what was I missing.
For this weeks #SundaySupper, Isabel challenged her readers to create retro recipes that takes them back to their childhood. As I pondered about what to make, I thought about dishes that I hated as a kid, that if revamped, I would love today. That’s when I decided I would revamp the carrot raisin salad that I hated as a kid, into something new and wonderful.
Here is what I created. I hope you like it!!
Carrot & Raisin Salad with Honey Lime Mint Poppyseed Vinaigrette
Honey Lime Mint Poppyseed Vinaigrette
2 tablespoons fresh lime juice
2 tablespoons olive oil
1 tablespoon red wine vinegar
2 tablespoons honey
1 teaspoon fresh mint leaves (thinly sliced)
1/4 teaspoon poppyseeds
Mix well in a bowl. Microwave for 1 minute. Set aside til ready to use. Store in air tight container in refrigerator.
Salad
2 cups shaved carrots
1/8 cup raisins
2 tablespoons honey vinaigrette
Toss well and serve cold.
Enjoy!!

This recipe reminds me a lot of Moroccan salads. I haven’t ever added raisins though. Can’t wait to try it!

This reminds me of a salad the my other halves parents make and they are Czech, The do apples and carrots. Its the perfect fresh side dish. I bet this one is too!

My grandmother made this often, usually with finely shredded carrots. I like how you kept it a little thicker and crunchier.
I never eat carrots and raisins in a salad but I think they go really well together. That dressing with poppy seeds and mint is a must-try! Very intriguing!
Do you know Chick-Fil-A serves this as a side dish? I probably hadn’t seen it in 20 years when I saw it being served there. I’m sure yours in much, much better though.
