Have you tried the Mystic Harvest Purple Corn Tortilla Chips? If not, definitely visit your local Costco and give them a try. They are that yummy, and packed with nutrients. More nutrients = less guilt in my book…LOL
I normally eat these chips solo, or with salsa, but today decided to pair it with some fish. Swai is a firm white from Vietnam, that also has a mild flavor, and works well with this dish.

Purple Tortilla Chips Crusted Swai with Strawberry-Mango-Kiwi Salsa & Yellow Rice
Directions:
Lightly season thawed/fresh Swai/Tilapia fillets with a little salt and cumin. Set aside.
Pulse Mystic Harvest chips in blender to get 1 cup. In a bowl mix 1/2 tablespoon chopped jalapeno, 1 teaspoon lime juice, 1/2 tablespoon olive oil, 1/4 cup fresh cilantro, 1/2 teaspoon chili powder, 1/4 teaspoon ground cumin, and 1 teaspoon seasoning salt. Add to chips and mix well.
In a shallow dish add 1 beaten egg and 1 tablespoon water. Mix well.
Dip fillets in egg mix, then coat in chips. Once all fillets are done, place on nonstick baking sheet and bake in 375 degree preheated oven for 15 minutes or until done.
Salsa
Combine 1 cup diced strawberries, 1/4 cup diced kiwi, 1/2 cup diced mango, 1 tablespoon finely chopped shallots, and 1 tsp lime juice, 1 teaspoon sugar, salt. Mix well and set aside when ready to use.
Serve salsa over fish with some rice and veggies.
