Revved Up Quinoa Veggie Bowl ~ Clean Eating Day 3 ~ Bento #101

I have a TINY chest deep freezer. I absolutely hate it, but really can’t see a need to get anything bigger. So I’ll continue to complain about it. Well today I went to store, and stocked up on some frozen items. Opened up my refrigerator freezer…FULL!!! Ventured over to look into my chest freezer…FULL!!! Can you say ANNOYING!!! And you don’t have to tell me the obvious. I already “KNOW” I have too much stuff in both freezers. SO I did what ANY annoyed person would do, I started to pull stuff out trying to see what the heck was in my freezer. Frozen quinoa…Totally forgot I had that!! Frozen diced squash, zucchini, and eggplant…What made me freeze that? Oh yeah, they were starting to go bad, and I read on PINTERST (I love PINTERST) that I could freeze stuff like squash. Since I literally had no clue how long I’d been freezing these items, I decided that they would make the perfect “RIGHT NOW CLEAN EATING” meal.

Quinoa Veggie Bowl

Who knew frozen veggies and quinoa could taste so good. Totally worth the annoyance I felt earlier. Had I not been annoyed, and forced to dig through my freezer in order to make room for “MORE” stuff, I would have NEVER remembered these items. See that’s the problem with chest deep freezers, you can’t see all the stuff you have stored…Okay, I’m done with my rant…LOL

I know you’re dying to know how I made this dish. So easy..So healthy…So clean eating!!!

Quinoa Veggie Bowl

You need 3 different saute’ pans. But if you don’t have that many, no biggie, you’ll just have to wash it out in between sauteing items.

Pan 1:

1/2 tablespoon high quality olive oil
1 1/2 cups frozen diced eggplant (thawed)
2 tablespoons chopped red onions
salt/pepper

Place oil in saute’ pan and place on medium heat. Once hot, add eggplant and onions. Saute until eggplant starts to brown and most of the liquid from being frozen is evaporated. Add more oil if needed. Season with salt/pepper to taste. Once done, remove from heat and set aside.

Pan 2:

1/2 tablespoon high quality olive oil
1 1/2 cups frozen diced yellow squash and zucchini blend (thawed)
1-2 tablespoons diced yellow bell pepper
salt/pepper

Place oil in saute’ pan and place on medium heat. Once hot, add zucchini/squash, and peppers. Saute until veggies starts to brown and most of the liquid from being frozen is evaporated. Add more oil if needed. Season with salt/pepper to taste. Once done, remove from heat and set aside.

Pan 3:

1 tablespoon high quality olive oil
2 cups frozen cooked quinoa (thawed)
1 tablespoon minced garlic
salt/pepper
1 tablespoon chopped italian parsley

Place oil in saute’ pan and place on medium heat. Once hot, add garlic and stir. Right before garlic starts to brown, add quinoa and mix well. Continue to stir to prevent quinoa from sticking. After 2-3 minutes, add parsley. Season with salt/pepper before removing from heat.

*Quinoa was cooked in a broth, so it already had some flavor. You can add additional spices to enhance quinoa flavor.*

To serve, add quinoa, squash, and eggplant to a bowl in sections. Garnish with fresh parsley before serving.
