Basil Vinaigrette Black Bean Pasta Salad ~ Bento #109

I’m having a lot of fun creating meals using black beans as the main ingredient.  It’s such a versatile bean, and goes well in so many dishes.  For today’s meal, I wanted to make some type of pasta salad.  I love eating pasta salads in the summer, and thought black beans would make a perfect addition to a simple pasta salad.

Basil Vinaigrette Black Bean Pasta Salad

The combination of Barilla Fiori Pasta, olives, tomatoes, black beans, and feta cheese tossed in a basil vinaigrette made this an absolutely delicious dish. I hope you like it!!

Basil Vinaigrette


1/2 tablespoon chopped shallots
1/4 cup fresh organic basil leaves
1 teaspoon dijon mustard
1/8 cup rice wine vinegar
1/3 cup olive oil
2 teaspoons sugar
1 teaspoon honey


1. Place all the ingredients in a food processor/blender and pulse until it is a smooth consistency. Season with salt/pepper to taste. Set aside until ready to use.

Basil Vinaigrette Black Bean Pasta Salad


1 cup rough chopped italian olives
1/2 cup sliced cherry tomatoes
1/2 cup black beans (rinsed and drained)
2 1/2 cups cooked Barilla Fiori Pasta
1/2 cup crumbled low fat feta cheese
1/4 cup basil vinaigrette



In a large mixing bowl add pasta, olives, tomatoes, beans, and feta cheese.


Slowly pour basil vinaigrette over pasta while mixing. I used 1/4 cup. You may desire to use more or less. Season with salt/pepper to taste if desire.

You can serve pasta immediately, or refrigerate and serve cold.
