Chicken Pot Pie ~ Bento #142

Chicken pot pie is one of the easiest comfort foods you can make.  It’s the perfect meal on a cold, winters day.  I love making chicken pot pie for my family, and I am happy to share my recipe with you.

The key to a yummy chicken pot pie is moist, flavorful chicken. My favorite way to cook chicken is using my oven broiler.  I add seasonings (salt/pepper/season salt/etc), and about 1-2tbsps of olive oil to my chicken.  I then rub seasonings and oil into the chicken, and allow chicken to marinate for about 15-20 min in the refrigerator.

Once marinated, I place chicken on a broiler grill pan (skin side up), and add 3 cups of water to the base of the pan. The steam generated from the water helps in the cooking process, and the liquid can be used as stock.

I turn the broiler on low (my broiler has 2 levels low/high), and then place chicken inside of oven. When skin starts to brown (@7-10min), I flip chicken over onto the other side.

I allow the chicken to cook until flesh side starts to brown, before flipping it back over (skin side up).  The entire cooking process should take around 25-30min.  Just pay close attention, making sure chicken is not burning.

Test chicken to make sure it is thoroughly cooked. Once cooked, remove from oven and allow to cool.

Cool chicken on a cutting board, until chicken can be torn apart with hands.

Once chicken is torn apart, discard bones and place chicken in a bowl until ready to incorporate into the soup.

Chicken Pot Pie


Cooked and shredded chicken (see above description) Should have about 3 cups
3 cups water
salt/pepper/seasoning salt
3 tbsp butter
3 tbsp flour
1-2 cups chicken stock
1 1/2 cups milk
1 160z pack of Birds Eye Classic Mixed Vegetables
1/4 tsp celery seeds
pie crust
1 egg + 1 tbsp water (whisked)


Cook and shred chicken as noted above.

In a large saucepan, add butter and place on medium heat. When butter is completely melted, add flour and stir. Cook until mixture becomes a tan color.

Combine chicken stock and milk into a large bowl, then slowly whisk liquid into saucepan. Whisk until liquid is smooth and has no lumps. Cook on medium-low heat until sauce starts to thicken.

Next add vegetables, chicken, and celery seeds to saucepan and mix well. Season to taste. Allow to cook for a few minutes before removing from heat.  If sauce is too thick, add a little more stock.

Roll out pie crust dough and cut into shapes with a cookie cutter (I used a leaf cutter).

Place cut dough on a lined cookie sheet and brush top of dough with egg/water mix.

Bake dough in a preheated 350 degree oven until golden brown. Once done remove from oven and allow to cool.

Add soup into a bowl and garnish with leaf crust.
