My kids have been on summer vacation for exactly 3 weeks, and we have been going non-stop. Between driving them to various camps, gymnastics practice, math classes, and other fun activities, I’m starting to feel as though I am spending more time in my car than at home. But they are having fun, we are bonding, and I don’t have to listen to the dreaded “I’m BORED” conversation, so I can’t complain.
Being on the go so much has really taught me the importance of proper preparation. I planned and prepared my kids school lunches throughout the school year, but never thought about lunch meal planning during the summer. Well after getting tired of running home to grab lunch, or making trips to Chick-fil-A and Chipotle, I decided to start packing our lunches to go.
It’s easy, convenient, WAY CHEAPER, and a great way to help maintain my kids healthy eating habits.
For lunch today in my Planetbox Rover, I made chicken salad on pretzel bread sandwiches. In the other compartments I added carrot sticks, grape tomatoes, Greek olives, mini Babybel original cheese, blackberries, sliced strawberries, blueberries, and Bobbysue’s nuts. This was the perfect on the go lunch. And with the exception of the olives, my kids ate everything. I can’t believe they don’t love olives…LOL
