I know I say this all the time, but I really love packing my leftovers for lunch the next day. It’s just so easy, and eliminates the never-ending, “What am I having for lunch today?” question.
Recently I made this amazing Israeli salad and topped it with some grilled chicken. It was so light and refreshing. A simple meal, packed with a ton of flavor.
I found the recipe here, and knew I had to try it. I used chicken breast instead of chicken thighs. I also added a bit of Adobo all purpose seasoning to the chicken seasoning blend. And instead of putting the chicken on a grill, I used my Bobby Flay cast iron grill, and placed chicken under my oven broiler.
For lunch the next day, I decided to use the chicken and create a grilled chicken wrap. One of my favorite wraps are Damascus Bakeries Flax Roll-ups. Their roll-ups are so delicious. I also added WOATS oatsnack, as a sweet treat.
I neatly packed my Easylunchbox, and when it was time to make my wrap sandwich, I used my lid as a plate. No need dirtying up extra dishes, when I can use my lid…LOL
I simply added all of my ingredients onto the roll-up and then rolled it up.
