I had the bright idea to make lunch box parfaits for my kids. I decided to keep it simple and make my parfait using Nature Valley Crunchy Oats ‘n Honey Granola bars, and a Go-GURT. I figured they would be easy to make, and a great way to combine their granola and Go-GURT.
Next I crumbled up 1 granola bar, and added it to a bowl with 1 tube of Go-GURT. I then lightly mixed together.
I then layered the bottom of a silicone muffin container with some of the Go-GURT/granola mix. Next I crumbled up the second granola bar, and sprinkled some of the granola on top of the Go-GURT/granola mix. I repeated this process until I got to the top of the muffin container. I then garnished the top with some crumbled granola.
Not wanting the parfait to be messy in their lunch boxes, I froze it overnight, and placed in their lunch boxes early the next morning, so that it would be thawed by lunch time.
Here is what their parfait looked like semi frozen in their Easylunchboxes before going to school. By the time my girls got to lunch, they said their parfait was completely thawed out and a perfect treat.
