About a year ago, I purchased an Instant Pot, and it has been a game changer.  Every week, I find myself literally searching for new recipes to make in my Instant Pot.

Yesterday, I was in the mood for lentils, so I decided to make one of my favorite Indian dishes Dal Makhani using my Instant Pot.

In less than an hour, I had this amazing meal.

Look at what I made for dinner!!!

I discovered this cracklin chicken recipe awhile ago, and love making it for dinner at least once or twice a month.  It goes perfectly with a side salad.

My kids went back to school today 😁

They are now in the 9th and 7th grade.

Over the past year, I’ve really focused on going from dinner plate to lunch box verses making something new for lunch daily. My kids now pack there own lunches, so most of lunch ideas I’ll be posting will be my personal lunch boxes.

About a week ago a dear friend posted a picture of a recent restaurant meal, and I was totally inspired to recreate it.

For dinner I made Thai grilled pork skewers with jaew sauce, crab fried rice, and sweet and sour Brussels sprouts.

I allowed my meat to marinate over night in the refrigerator, and then cooked using my gas grill.

Seriously the best thing I’ve eaten in awhile.

And to kick off my return to blogging, I decided to pack my lunch in an EasyLunchboxes.

Wow!! I cannot believe it was been 1.5yrs since my last entry 😱. A lot has happened over the past 1.5yrs.

I’m still living in Mexico and absolutely love exploring and learning about this amazing country.

Hey Fans…I’m Back!!

I seriously can’t believe it’s been over a year since I last posted anything on my blog.  Life just got really hectic, and I needed a break.

I said adios to Ohio and hola to Mexico.  Me and my family relocated here in Aug 2015, and so far we really love.  I’ve been traveling a lot within Mexico, and learning a lot about the culture and local cuisine.

I got heavily into fitness since I last posted, and this summer I plan on taking a test to become a certified personal trainer.  My goal is to combine my pediatric RN knowledge with my personal trainer knowledge to work with kids.

My kids are older now, so they are packing their own lunches.  But I’ve committed to eating a salad a day for the entire year, so I will definitely be sharing my salads and meal ideas with you guys.

Well just wanted to say a quick hello, to let you know I’m back to blogging  :)

Grilled Curry Chicken with Thai Chili Mayo in Lunchbots Cinco2

I am so over boring food.  I just can’t do it anymore.  I want to eat food that excites me.  That makes me shed a tear once I’ve taken my last bite.  That makes me regret the fact I didn’t make more.  That leaves me yearning for another memorable food experience.

Yesterday. I pulled some chicken breast out of the freezer, and struggled trying to decide what to make.  Remember I just mentioned I am SO OVER EATING BORING FOOD.  So I knew it couldn’t be boring.  But I wanted a sandwich.  I wanted something that would jazz up my lunch box.  I wanted something memorable.  I wanted something that would make me shed a tear after I took my last bite.

I’m caribbean.  I should make a caribbean sandwich.  But I love asian food.  I should make an asian sandwich.  But I’m caribbean and I love asian food.  So I gotta make a caribbean asian sandwich.  And so it began!!

This sweet thai chili mayo is truly the all-star of this sandwich.  When I say this spread is to die for, I’m not exaggerating.  It is that good.  The sweetness and spicy flavor of the thai chili sauce combined with the creaminess of the mayo, is just the perfect combination.  Wild Thymes makes some of the BEST sauces I’ve ever had, and I use their Thai Chili Dipping Sauce in a lot of my asian dishes.

Grilled Curry Chicken With Thai Chili Mayo 2

I could not have created a more perfect sandwich to pack in my amazing Lunchbots Cinco lunch box.  I also packed some Driscoll’s mixed berries, a mini Babybel cheese, Goodie Girl Crunchy Chaos gluten free cookies, mixed nuts/dried berries, grape tomatoes, and sliced carrots.  This has truly been my most impressive lunch so far this month :)

Okay…Enough chatter.  Cause I know you want the recipe 😉

Grilled Curry Chicken with Sweet Thai Chili Mayo Sandwich

3-4 organic chicken breast

olive oil

salt/pepper

adobo seasoning

Chief (Indian Head) Curry Powder

mayo

Wild Thymes Thai Chili Dipping Sauce

Mini baguette

thinly sliced carrots

thinly sliced cucumbers

rough chopped fresh cilantro

Directions

1.  Clean chicken breast and pat dry.

2.  Place in a large container and drizzle with olive oil.

3.  Add desired amount of salt/pepper/adobo seasoning and curry powder.

4.  Rub seasonings into chicken breast.  Cover container and place in refrigerator.  Allow chicken to marinate for at least 1hrs.

5.  Place oven on broil.  Next remove chicken breast from refrigerator and take out of container.  Place chicken on a grill pan and place in oven.

6.  Allow chicken to broil on both sides until done.

7.  Once done remove from oven and place chicken on a cutting board.  Allow chicken to rest a few minutes before cutting.

8.  Cut chicken into thin strips.  And set aside.

9.  In a small bowl mix about 1 tbsp mayo and 1 tbsp Wild Thymes Thai Chili Dipping Sauce.  Adjust flavors to your liking.

10.  Warm up mini baguette in oven.  Slice and spread mayo sauce on both sides.

11.  Add chicken and veggies before eating.  Can be eaten warm or at room temp.

After making my Sweet Potato Leek Zucchini Fritters, I placed my leftover shredded zucchini in a ziploc bag, and refrigerated for later use.  I wasn’t sure what I wanted to make, but I knew I wanted to make some type of dessert dish with the zucchini.  I love zucchini bread, so I thought about making that with my leftover zucchini.  On pg 183 of The 52 New Foods Challenge Cookbook, Jennifer Lee has a great zucchini muffin recipe.  After seeing her recipe, I got inspired to make my own version of zucchini muffins.

I added blueberries  and walnuts to my batter in order to jazz up my typical zucchini muffin recipe.

Here is how to make my zucchini muffins.

Blueberry Walnut Zucchini Muffins

Ingredients

2 cups shredded zucchini (I used previously shredded zucchini that had a lot of moisture)

3 eggs (lightly beaten)

1 cup vegetable oil

3 tsp vanilla extract

1 cup sugar (my original recipe calls for more sugar so gauge to your preference)

3 cups all purpose flour (can use whole wheat all-purpose flour)

1 tsp salt

1 tsp baking powder

1/4 tsp baking soda

1 tbsp ground cinnamon

1 tsp ground nutmeg

1 pint fresh blueberries

1 cup chopped walnuts

Directions

1. Preheat oven to 350 degrees.  Line standard cupcake tin with silicone baking cups (can also use regular baking cup liners).

2. In a large bowl add eggs and lightly beat with a whisk.  Then add oil, vanilla, and sugar.   Mix well, then fold in zucchini.  The zucchini will be wet since it was shredded in advance.

3.  Next add flour, salt, baking powder, baking soda, cinnamon, and nutmeg.  Beat with a whisk until everything is incorporated.

4.  Add blueberries and walnuts and gently stir with a spoon to mix into batter.

5.  Add batter evenly to muffin tins, and place in preheated oven.  Bake for 20-25 minutes or until toothpick comes out clean.

6.  Remove from oven and allow to slightly cool before serving.

7.  Extra muffins can be frozen once completely cooled.

When looking for lunch box ideas, consider making fritters.  They are normally easy to make, and typically freeze well.  I normally make a batch of some type of fritters once a week to pack for lunch.   After skimming through The 52 Food Challenge Cookbook, I got inspired to make a vegetarian fritter using sweet potato, leek, and zucchini.  These fritters can be pan fried or baked depending on your personal preference.

Here my fritters are served up for lunch in my Three-In-One ECOLunchbox.  I opted to use light soy sauce as a dip for my fritters, but you can use whatever you like.

I ate my fritters at room temperature, but they can also be microwaved for a few seconds if you want them warmed up.

Here is how you make these fritters

Sweet Potato, Leek, & Zucchini Fritters

Ingredients

1/2 cup shredded raw sweet potato

1 cup shredded fresh zucchini

1/4 cup thinly sliced fresh leeks

1/8 cup rice flour

1-2 tsp sesame seeds

1 tbsp all purpose flour

salt/pepper

1 egg (whisked)

cooking oil

Directions

1.  In a bowl add zucchini and sweet potato.  Sprinkle with a little salt and set aside for 5-10min.

2.  On a clean dish towel, add the zucchini and sweet potato, and squeeze out the excess water.  You want sweet potato/zucchini to be moist, but not wet.

3.  Return mix back into bowl, and add leeks, rice flour, sesame seeds, all purpose flour, salt/pepper, and 1/2 of the whisked egg.

4.  Mix well to make sure everything is well incorporated.

5.  Form mix into about 4 patties.

6.  Add some cooking oil to a sauté pan and place on medium heat.  Once oil is hot, add fritters.  Brown on both sides until fritters are done.  Once done serve with your favorite dipping sauce.  I eat mine with a little soy sauce.  You can also bake the fritters if you don’t want to pan fry.

I recently told you guys about the new cookbook I received a few weeks ago called The 52 New Foods Challenge.  After flipping through the pages, and reading the concept, I was totally inspired to create some new recipes with my children.  I saw words such as roasted maple butternut, sweet potatoes, kale, cranberries, and decided to create a couscous salad using these ingredients.

I created this recipe after being inspired by several of the recipes and ingredients noted in this cookbook.

My salad is perfect eaten as a meal or side dish.

And if you are a lunch packer like myself, you can pack your leftovers for lunch.  I packed this salad in my Fit & Fresh Bento Lunch box.

Salad is packed with nutrients and super easy for kids to make.

I often make a big batch of roasted butternut squash and sweet potatoes during the Fall, and keep in the refrigerator to use in a variety of meals.

Here is how to make this salad.

Roasted Butternut Squash & Sweet Potato Cranberry Kale Couscous Salad

Ingredients

2/3 cups Israeli Couscous
1 cup thinly sliced raw organic kale (leaf only/no hard stem)
1/8 cup sliced green onions
1/3 cup dried cranberries
1/3 cup roasted sliced almonds
1 cup roasted maple butternut squash & sweet potatoes (pg. 96 in cookbook)

Dressing

1 tbsp + 2 tsp honey
1 tsp grainy mustard
1/8 cup white wine vinegar
1 tbsp light oil
salt/pepper

Directions

1. Cook couscous as indicated on package. Once done, drain and allow couscous to air dry in strainer. You don’t wait couscous to be wet in texture when preparing the salad.

2. In a bowl whisk together dressing ingredients. Adjust taste to your liking.

3. In a large mixing bowl add cooked couscous, kale, green onions, roasted maple butternut squash & sweet potatoes.

4. Drizzle with about 1/2 of the dressing and gently toss. Taste and add more dressing if needed.

5. Add roasted almonds and cranberry and toss before serving.

About a year ago, I was introduced to Jennifer Lee and her game Crunch a Color.  Crunch a Color is a mealtime card game where kids gain points/rewards for eating vegetables, fruits, proteins and grains. It is a great way to introduce kids to new foods, and helps them understand the importance of having a balanced diet.  After reviewing her game, Jennifer later informed me she would be creating a cookbook, and wanted to know if I would like to review it.  Since I believe in the importance of families maintaining a balanced diet, I agreed.

The 52 New Foods Challenge Cookbook Review

I received The 52 New Foods Challenge Cookbook a few weeks ago, and was immediately drawn to the simplicity of the recipes.  As someone who loves to cook, but is pressed for time,  I love how the recipes are relatively easy to make and don’t require a lot of ingredients.  In the cookbook, the goal is to try one new food each week for a year.  The cookbook is broken down into seasons (Fall, Winter, Spring, Summer), and encourages you to buy seasonal ingredients.  It also encourages you to make your children an active participant in the planning and cooking process.  Doing this will help incorporate healthy eating habits within your children, and help to inspire them try and embrace new things.

As a result of reviewing this cookbook, I was inspired to create three of my own recipes with my children.

All three of these recipes were very easy to make, and encouraged my children to try new dishes.  I am happy to have this cookbook in my collection, and look forward to creating more recipes inspired by this cookbook with my children.  I hope you are also inspired to check out this cookbook with your children.  You will not be disappointed.
