Sweet Potato Burger with Brown Sugar & Honey Mayo Bento #33

I love sweet potatoes.  I can eat them smashed, whipped, baked, fried.  I really don’t care.  I love them that much.  Well in preparation for Thanksgiving, I went a bit overboard when it came to buying sweet potatoes.  So not wanting any of my sweet potatoes to go to waste, I started thinking about fun ways in which I could prepare my favorite starch.  I started looking for sweet potato recipes, and was intrigued when I saw recipes for sweet potato burgers.  However, I was a bit turned off by the addition of tofu, beans, spices.  I mean, I enjoy beans, tofu, and spices, but not with my sweet potato.  I didn’t want to add a lot of ingredients that would camouflage the sweet potato taste.  So in thinking about my ingredients, I decided to stick with the basics, and just added a sweet potato, flour, brown sugar, and bread crumbs.  What I created was simply delicious.  Now I’m sad I only made enough for 1 serving.  I know better next time ;).  I hope you enjoy it as much as I did.

Dice up 1 small sweet potato and add to a pot of boiling water.  When sweet potato is fork tender, drain water from pot, and mash diced sweet potato with a fork.  Once mashed, add 1/4 cup of the mashed sweet potato to a bowl.  Then add 1 tablespoon flour and 1 tablespoon brown sugar to bowl.  Mix well.

Form sweet potato mix into a patty.  On plate add panko breadcrumbs, and pat into patty.  In a frying pan add 1/2 tablespoon canola oil and place on medium heat.  Once oil is heated, add patty and pan fry.  When 1 side is brown, flip and brown the other side.  When done, keep patty in frying pan, and place pan in 375 degree oven for 5-10 minutes.  When done, remove pan from oven.

Of course EVERY great burger needs a GREAT sauce.  In keeping it simple, I just whipped up a sauce using 1 teaspoon brown sugar, 1/2 teaspoon honey, and 2 teaspoons mayonnaise.  Add all ingredients into a bowl and whip until completely mixed.

To assemble burger, add sauce to toasted honey wheat bun.  Place warm patty on top of sauce, top with spring greens, and drizzle remaining sauce over greens.

Ingredients for ONE serving

1/4 cup cooked mashed sweet potatoes

1 tablespoon flour

1 tablespoon brown sugar

1/2 tablespoon canola oil

Panko breadcrumbs

Brown Sugar & Honey Sauce

1 teaspoon brown sugar

1/2 teaspoon honey

2 teaspoons mayo
