Emeril’s Jambalaya Pasta with Penne, Chicken, Shrimp and Andouille Sausage #SundaySupper

About 2 weeks ago, I stumbled upon a hashtag on Twitter that said #SundaySupper.  Intrigued, I clicked on several links, that eventually lead me here: http://familyfoodie.com/sundaysupper/

So many families have gotten away from eating together.   The concept of Sunday supper and families breaking bread together, is quickly becoming a thing of the past.  After becoming familiar with this blog, I contacted the owner, and told her that I would LOVE to join her movement.  She gladly welcomed me to the group, and here I am participating in my first #SundaySupper, with some other amazing cooks.  

For my first #SundaySupper, I decided to remake one of my FAVORITE chefs pasta dish.  I grew up watching Emeril Live (BAM!!!) on the Food Network, and just loved how excited he was about cooking great food.  No matter how simple or involved, Emeril made you want to lick the TV screen.  This is one of my favorite dishes that he makes, and I am happy to share it with #SundaySupper.


Emeril’s Jambalaya Pasta with Penne, Chicken, Shrimp, and Andouille Sausage #SundaySupper


  • 2 cups penne pasta
  • 2 tablespoons olive oil
  • 1 cup large raw shrimp (diced)
  • creole seasoning (to taste) I used Tony Chachere’s
  • 3/4 cup boneless, skinless chicken breast (diced)
  • 3/4 cup andouille sausage (diced)
  • 1/4 cup yellow onion, small diced
  • 1/4 cup red bell pepper, small diced
  • 1/2 tablespoon minced garlic
  • 1/4 cup chicken stock
  • 1/2 cup can diced tomatoes
  • 1/2 tablespoon freshly chopped thyme leaves
  • 1/4 cup heavy cream
  • 1/2 tablespoons freshly chopped basil leaves
  • 1/4 cup grated Parmesan


In a large pot, bring water to boil, and cook the pasta until nearly al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

While the pasta cooks, set a 14-inch saute pan over medium-high heat and add 2 tablespoon of the olive oil, swirl the pan to evenly coat with the oil. Season the shrimp with creole seasoning to taste. Place the shrimp in the pan and saute for about 1 minute. Remove the shrimp from the pan and set aside. Season the chicken breast with creole seasoning to taste, and place the chicken breast in the pan.  Saute until lightly brown on both sides. Remove the chicken from the pan and set aside with the shrimp.

Place the sausage, onions and bell peppers to the pan, and saute.   Stir occasionally, until the sausage is lightly caramelized and the onions are translucent. Add the garlic to the pan and saute for about 30 seconds. Add the chicken stock to the pan and scrape with a spoon to remove any browned bits that have formed in the bottom of the pan, about 30 seconds. Add the diced tomatoes, fresh thyme, and additional creole seasoning if needed.  Cook for 2 minutes. Add the heavy cream to the pan and cook an additional 2 minutes. Return the shrimp and chicken to the pan, as well as the nearly al dente pasta and the reserved 1/2 cup of pasta cooking water. Continue to cook the sauce and pasta, stirring occasionally, until the shrimp and chicken are cooked through, the pasta is al dente and most of the pasta cooking water has evaporated, about 3 minutes. Remove from the heat and add the basil and Parmesan. Toss to combine and serve while hot.
