Apple Cinnamon Roll Cake

Don’t you just love those ooey gooey cinnamon rolls.  Every time I pass a Cinnabon shop, I just stand by the counter and do a BIG inhale before placing my order.  When you cut into it and take that first bite…DIVINE!!!

I had the ambition to make cinnamon rolls the other day, but just didn’t have the time.  I didn’t want my cinnamon rolls to be rushed, so I decided to go with plan B.  I came across this website Chef in Training and found a recipe for a Cinnamon Roll Cake http://bit.ly/ZTJbZ4. After seeing the picture of this cake, I knew I HAD TO MAKE IT.  But in true Roxx Box fashion, I am always trying to add my own twist on a recipe.  So I added cinnamon apples to the batter, and served it with sauteed cinnamon apples and vanilla ice cream.

Apple Cinnamon Roll Cake

Look at all that ooey gooeyness!!!

Here is how you make this AWESOME Apple Cinnamon Roll Cake

Peel and dice up 2 small gala apples. Add 2 tablespoon butter to a saute pan and place on medium heat. Once butter melts, add diced apples and 1 teaspoon cinnamon sugar to pan. Mix well and saute for about 2 minutes. You don’t want to overcook apples. You still want them to be relatively firm when adding to batter. Remove from heat and allow to cool.

In a bowl add 3 cups flour, 1/4 teaspoon salt, 1 cup sugar, 4 teaspoons baking powder, 1 1/2 cups milk, 2 eggs, and 2 teaspoons vanilla extract. Mix well with an electric mixer. Once everything is combined, slowly stir in 1/2 cup melted butter. Pour into a greased 9×13 baking pan.

Next make topping using 1 cup softened butter, 1 cup brown sugar, 2 tablespoons flour, and 1 tablespoon cinnamon. In a large bowl mix the 1 cup softened butter, brown sugar, flour and cinnamon together until well combined and creamy. Add cooled sauteed apples to the topping mix, and mix well. Drop topping mix evenly over the batter by the tablespoonfuls and use a blunt knife to marble/swirl through the cake.

Place in a preheated 350 degree oven and bake for 40 minutes or until a toothpick inserted near the center comes out nearly clean.

Apple Cinnamon Roll Cake

While the cake is baking, make the glaze using 2 cups powdered sugar, 5 tablespoons milk, and 1 teaspoon vanilla extract. Mix these ingredients will until all lumps are removed and set aside to be used later. After cake is done and removed from oven, allow to cool for a few minutes then pour glaze over cake.

Before serving, slice up some gala apples. In a saute pan, add a little butter and place on medium heat. Once butter is melted, add gala apples.

Next add some cinnamon sugar, and saute until apples begin to soften.

Here is what apples look like when done. Place on a plate with some Apple Cinnamon Roll Cake and Vanilla Ice cream.

Oh my, this looks incredible. Haven’t gotten the chance to make more of your recipes yet but now that the semester is over I’m definitely going to soon.

further reading do you combine the ingredients?

You add all the cake ingredients together, then mix well. Then you add all of the topping ingredients + the apples and mix well. Then incorporate the topping mix into the cake batter mix that is already in the baking dish. Hope this helps.

You can get at grocery store, or just make your own adding cinnamon and sugar.
