Yesterday, I made this amazing meal with short ribs:
I made enough short ribs to have leftovers, and wanted to make something creative for lunch.
So I thinnly sliced up 1 medium red onion. In a medium cast iron/saute pan, I added 1 tablespoon butter and placed pan on medium heat. Once butter melted, I added onions to pan.
Once onions started to get tender, I added 2 1/2 tablespoons red wine vinegar, and 1 teaspoon sugar. I mixed well, and allowed onions to simmer until vinegar had evaporated. Adjust to taste. When done, I removed from heat and placed in a bowl to cool.
Next I got 1 or 2 braised short ribs from the left over container, and removed any excess sauce from short rib/ribs. Once most of the sauce was removed off of the short rib, I placed in a bowl and shredded ribs with a fork. I then placed bowl with shredded ribs in microwave, and heated for about 1 minute. I then set it aside for later.
I then grabbed some naan bread.
I sliced naan in 1/2 and added softened butter to both sides. Next I placed naan on a flat surface grill pan, and adjusted heat to medium.
While naan bread was on the grill pan, I added the shredded short ribs, sliced fresh mozzarella cheese, pickled onions, and lettuce onto the naan bread.
I then added the other slice on naan on top of the lettuce, and pressed with a pan/sandwich press. Once naan begun to brown and cheese begun to melt, I flipped sandwich over to the other side. I pressed down again. When both sides were brown and cheese was melted, I removed from grill pan and placed on a cutting board. I sliced sandwich in half and served.
