When this year first started, all I could think about was finishing my BS in Nursing from Ohio University. Never in a million years did I think that by the end of 2012, I would be writing a food blog. It’s amazing how things have a way for happening. Like most busy Moms, I was content packing my kids P&J sandwiches, or having them buy school lunches. It wasn’t until I really sat down and thought about what I was feeding my kids that I had an “Ah Ha Moment”. My kids are gymnast. Their little bodies are growing. I needed to ensure that what they were putting into their bodies would help fuel them throughout the day. So I made a commitment on August 22, 2012, to pack them a nutritious lunch daily during the school week. Immediately I started sharing pictures of my lunches on Facebook. My friends/family became INSTANT cheerleaders. They would ask me question. Provide suggestions. And some would even duplicate lunches I made for their own kids. And every once in awhile, one would encourage me to make a menu and write down recipes. Then in October, a dear friend reached out to me, and talked to me about doing something bigger with lunches. This friend persuaded me to step out of my comfort zone, and to reach a broader audience. And from there The ROXX Box (a name given to me by another dear friend) was created.
My concept was simple, creating fast and nutritious lunches, 1 bento box at a time. And on October 5, 2012, I made my first blog entry. I was totally clueless regarding what to write, so in the beginning I only posted pictures of my bento boxes and listed a weekly menu. Then I started to get a lot of questions about how I was making my meals, so I decided to add recipes to my post. But I am a very visual reader, so just posting recipes wasn’t enough. I realized the blogs I loved contained step by step pictures on how they were making a certain dish. That’s when I decided to do the same thing. I love it when readers tell me seeing my pictures really helped, and they enjoyed my dish.
One of the BIGGEST blessings this year was crossing paths with Kelly Lester (inventor of Easy Lunchboxes) www.easylunchboxes.com . Because of Kelly, this was my MOST POPULAR blog post in 2012 http://pinterest.com/pin/233272455670591999/. She has been a cheerleader and a friend to many of us in the bento box lunch making world, and we are better for knowing her. Pinterest (http://pinterest.com/theroxxbox/) and Twitter (https://twitter.com/theroxxbox) have also been good to me in 2012. Through Twitter, I was able to find this amazing group called #SundaySupper. Isabel of Family Foodie (www.familyfoodie.com) started #SundaySupper as a mission to bring back Sunday supper around the family table in every home. I love being a part of something so meaningful, and look forward to sharing/tweeting recipes with this group on Sundays.
So what can you expect from The ROXX Box in 2013? That is the question I keep asking myself as I prepare for the new year. First there is a NEW BLOG layout in the works. Cory from Zesty Cook (http://zestycook.com/) has taken on the task of creating me a brand new blog. I can’t wait to see the final product. There will be food challenges, to inspire my readers to try something new. I plan on doing product reviews, and introducing my readers to new products. And there will be giveaways, because who doesn’t like FREE Stuff? 😉
