How many of you are in a rut regarding your diet and making healthier eating choices? I know for many of us, it is so easy to grab fast food or a frozen dinner as our everyday meal option. Do you pay attention to calories, carbs, fat content in the meals that you are consuming? I think if more of us paid closer attention to what we were putting into our bodies, our diets would DRASTICALLY change.
For this weeks #SundaySupper, bloggers were challenged to create recipes that could be a part of a slim-down or healthy lifestyle. Creating something that was low-carb, low cal, low sugar, low-fat, nutritious, and healthy was the challenge presented to the bloggers. Since this January when I started doing my #SaladJam, I have made a conscious effort to pay closer attention to what I am consuming. It has been challenging at times, but I do believe that with some effort and preparation, anyone can achieve a healthier lifestyle.
For this weeks #SundaySupper, I decided to create a simple confetti cabbage slaw and salmon wrap. It is low-fat, low-carb, low-cal, and simply delicious.

Here is how you make the wrap:

Slice up some fresh salmon and season with olive oil, salt, and pepper. Mix well.

Place salmon on a hot grill pan. Grill on both sides until done. Once done remove from grill and place on a plate until ready to use.

While salmon is grilling, spread some fat-free cream cheese over a multi-grain low in carbs tortilla. I used Tumaro’s (www.tumaros.com)

In a bowl add some thinly slice red and green cabbage, and some shredded carrots. Coat cabbage with a marinate of brown sugar, rice vinegar, and salt.

To assembly wrap, place cabbage blend on top of cream cheese. Next add some grilled red onions (optional). Add as much or as little veggies as you desire. Next add the grilled salmon, and roll tortilla up into a wrap.

Slice in half at an angle, and serve with the cabbage medley.

Yum…I love using red cabbage. Your wrap and salad both look so delicious.

Truly, we eat with out eyes first and your colors just burst with fun. On top of it, your wrap is low-cal, easy to make and contains rice vinegar. (Famously delicious with just about everything.)
