Mixed Greens Salad with Candied Pecan Goat Cheese Balls & Onion-Poppyseed Dressing

OK…I know I keep saying this about every food blog I talk about, but this is SERIOUSLY 1 of my FAVORITES.  I just love how Jennifer blogs about her recipes, and takes you through a series of delicious photos.  It’s bloggers like her that makes me want to step up my game.  

Spinach Salad with Candied Pecan Goat Cheese Balls

So the other night, I saw this.  As luck would have it, I already had mixed greens, strawberries, and goat cheese in my refrigerator. INSTANTLY, I knew what I was about to make for dinner.  But here’s the thing, I am not a HUGE fan of goat cheese.  The after taste gets to me after awhile.  But I do like goat cheese with sweet items, so I started to think about a way to make the goat cheese more desirable.  Just so happened that at the same time I was thinking this, I was eating on some candied pecan I recently purchased at Trader Joe’s.  Then it dawned on me, why not incorporate the pecans into the goat cheese.  I grabbed my spice grinder and created something wonderful.

All you do is add some candied pecans into a grinder, and pulse until finely ground.  Place on a plate.  Rolls some softened goat cheese into tiny balls, and roll into the ground candied pecans.  Refrigerate until ready to use.

For dressing:

1 tbsp worcestershire sauce

1 tbsp white vinegar

1/8 cup vegetable oil

1-2 tbsp granulated sugar

1/4-1/2 tbsp finely grated onion

1 tbsp poppy seeds

salt/pepper to taste

For Salad:

baby spinach

strawberries, hulled and sliced

sliced almonds, toasted


Whisk together all dressing ingredients, taste, and adjust as needed.

In a large bowl, combine baby spinach and sliced strawberries. Add a splash of dressing and toss. Repeat, adding small amounts of dressing and tossing until leaves are lightly coated (you will have extra dressing).

Place salad on plate, arrange goat cheese balls onto salad.
