Mo created her Morselicious Mix and treats out of love for her dad Mac, a diabetic and heart patient, after his successful quadruple bypass surgery. Mac-n-Mo’s Morselicious Mix is a completely natural mix of brown rice, almonds, unsweetened coconut, flax and spices. This mix can be incorporated into a variety of dishes such as morsels, muffins, cakes, cupcakes, casseroles, to create nutritious dishes at home.
When I first received Mac-n-Mo’s Morselicious Mix, I knew I wanted to incorporate it into a vegan bar mix. I wanted to stay true to the ingredients within the mix, and opted not to add any non-organic, peanuts/tree nuts, or wheat products.
In the mix you can see visually see the shredded coconut, and taste hints of cinnamon and nutmeg.
These bars were so delicious, and perfect to eat as a snack or recovery bar after working out.
Apricot, Dates, Coconut Vegan Bars
2 cups old fashioned whole grain oats (organic)
1/4 cup light brown sugar (organic)
1/4 cup coconut flour (organic)
1/2 cup chopped dried apricots (organic)
1/2 cup raisins (organic)
1/8 cup chopped Medjool dates (organic)
1/4 cup pumpkin seeds
1/2 cup Morselicious mix
1/3 cup coconut oil (organic)
1/3 cup agave syrup (organic)
1/3 cup homemade applesauce (organic)
1 tsp almond extract
4 tbsp water
Preheat the oven to 350 degrees. Line one 8″x8″ pan with a silpat mat or parchment paper. If using parchment paper, lightly grease the parchment paper.
In a large bowl, combine all of the dry ingredients (up to Morselicious mix) and mix until everything is evenly distributed. In a medium sized bowl, whisk together all wet ingredients. Pour the wet ingredients into the dry ingredients and mix together until everything is evenly coated.
Pour into prepared pan and press down until the mix is firm and leveled in the entire pan. Put pan in preheated oven and bake around 30 minutes, or until light browned around the edges.
Remove from oven and allow to cool until pan is no longer hot. Place in freezer and allow to chill for an additional hour. After the bars are cooled, gently flip bars out of pan, and cut bars into desired size with a sharp knife. Store cut bars in an airtight container in the refrigerator. Can be store up to 2 weeks.
Overall, I really liked the mix, and can see myself incorporating it into more of my baked goods. The taste was light, and the ingredients were a perfect blend of texture and spices. I would definitely recommend this mix to anyone in such of healthy alternatives. Mac-n-Mo’s products can be purchased online or locally if in your area.
