I’m back. Done with my much needed hiatus. Life just seemed to be coming at me non-stop, and I just needed to take a step back and chill for awhile. I’ve spent a lot of time thinking about ways to revamp my blog. Ways to make it better/more relevant. I love blogging about bento boxes, but I want my blog to cover a broader audience, and provide different content. Over the next few months, I’ll be tossing around ideas on how I want to improve my blog. As I gain more clarity, I will definitely share my thoughts with you, and ask for your opinions/suggestions.
But for now, I’ll just tell you about these amazing greek lamb rolls I made for dinner. They were so delicious!!!
I found this recipe, and just adapted it to my liking. It was super easy to make and full of flavor.
I made 5 small rolls, instead of 1 long roll as stated in original recipe.
Let the rolls rest for a few minutes before slicing.
I decided to use Damascus Bakeries Flax Roll-up to make my gyros.
I added some Wild Garden roasted garlic hummus over the flatbread.
I then topped the flax roll-up with freshly sliced cucumbers, roma tomatoes, sliced greek lamb rolls, tzatziki sauce, and fresh italian parsley, before folding it in half.
This greek lamb rolls are perfect for breakfast, lunch, and dinner. Here I am having it for breakfast, along with a hard boiled egg, fresh spinach, and a peanut butter & banana sandwich.
And for lunch, I packed it up in my Planetbox Launch lunch box. My lunch box includes 3 Damascus Bakeries flax roll-ups, sliced greek lamb rolls, fresh italian parsley, fresh mangoes and blueberries, sliced cucumbers and roma tomatoes, and homemade tzatziki sauce.
