Tuna fish salad is a staple in my house. I eat it on bread, with crackers, or on a bed of lettuce. It is so easy to make, and everyone has their own favorite tuna salad variation.
This week, I decided to put an asian spin on my favorite tuna salad recipe. I added roasted peanuts, fresh cilantro, ginger, and Kozlowski Spicy Cilantro & Citrus Dressing, to jazz it up. If you haven’t tried Kozlowski Farms products, you are truly missing out. They sell some AMAZING products, and I love everything I have received and tried from that company.
I knew I wanted to have my tuna salad for lunch, so decided to make it into a sandwich.
On a whole grain bread, I added havarti cheese, lettuce, slice tomatoes, and my asian tuna fish salad.
My sandwich was so good, I decided to pack it for lunch the next day in my Lunchbots Trio lunch box.
Asian Tuna Fish Salad
(2) 5oz cans water packed tuna, drained
finely chopped red onions
ginger powder (@1tsp or more)
freshly chopped cilantro
chopped roasted peanuts
1/2 cup mayo (can use low fat)
2+ Tbsps Kozlowski Spicy Cilantro & Citrus dressing
In a bowl add first 6 ingredients. In another bowl add mayo, sesame oil, salt/pepper, and dressing. Adjust flavors as needed. Pour “some” of the dressing mix into the bowl containing tuna fish and mix. Add more dressing if needed. Refrigerate remaining dressing (great to drizzle on salads). Garnish tuna fish with extra chopped cilantro before serving with bread/crackers.
