I seriously cannot believe summer is over. After almost 3 months of non-stop togetherness, my girls have gone back to school. They are both excited about entering the 4th and 6th grade, and I am excited them flourish this school year.
As I prepare to think about the types of lunches I want to pack my girls this school year, I have to remain mindful of the fact they only have 20 minutes to eat. Most of the meals I make this school year will be easy to make, easy to transport, and easy to consume.
So to kick off the 2014-2015 school year, here is the lunch I packed for my girls.
In their Planetbox Rover I packed: mixed berries, sliced carrots, cherry tomatoes, a fruit chew, tuna fish salad, crackers, dried fruit and nuts, and a Go-GURT. And as a special touch, I added a Lunchbox Love card. Their lunch box is well balanced, nutritious, and the perfect portion to consume in 20 minutes.
