My kids went back to school today 😁

They are now in the 9th and 7th grade.

Over the past year, I’ve really focused on going from dinner plate to lunch box verses making something new for lunch daily. My kids now pack there own lunches, so most of lunch ideas I’ll be posting will be my personal lunch boxes.

About a week ago a dear friend posted a picture of a recent restaurant meal, and I was totally inspired to recreate it.

For dinner I made Thai grilled pork skewers with jaew sauce, crab fried rice, and sweet and sour Brussels sprouts.

I allowed my meat to marinate over night in the refrigerator, and then cooked using my gas grill.

Seriously the best thing I’ve eaten in awhile.

And to kick off my return to blogging, I decided to pack my lunch in an EasyLunchboxes.

Every so often we are blessed to cross paths with people who really inspire us and make us better people. Early in my food blogging journey, I met such a person in Kelly creator of EasyLunchboxes. She has been one of my biggest cheerleaders, and I’m proud to say she is a person I truly admire. If you aren’t familiar with these lunch boxes, you can check them out on the clickable link above, or at your local Target stores.

If interested in making the meals I’ve posted here are the links:
